Tasty Cornbread Taco Bake

"An easy casserole dish I found in the Taste of Home Casserole cookbook, originally from Vicki Good. I adapted it to suite my family's tastes."

  • After cooking and draining the ground beef, add the onions, tomato sauce, corn, water, and taco seasoning.
  • Spoon into a greased 2 1/2 quart baking dish.
  • Prepare the corn bread according to the package directions. Pour over the beef mixture.
  • Bake uncovered at 400 degrees for 20 minutes or until the cornbread is done.
  • Top with cheese and bake 5 more minutes to melt the cheese.
  • Enjoy!

  1. This was actually quiet delicious, and easy. I only used 1 lb of hamburger, so I added 1 cup of black beans. I used Fire Roasted Tomatoes. Since we like spicy, I used Hot Taco Mix, added a fresh jalapeno, and fresh cilantro. I used the Jiffy Cornbread mix, and it seemed really thick and was hard to spread, but came out great! My boyfriend really liked this recipe, and I will definitely make it again.

  2. I added 2 cups cooked elbow macaroni and a can of chili without beans to the pot. No corn. This was delicious!!!!
     
  3. I started with a different recipe, then got scared of all the ingredients, so stumbled upon this one halfway through it. I made it a bit different, since I'd already started making the other, but it was very good. I had cornbread on the bottom, poked holes in top when it was done, spread the tomato soup, then put ground beef, sour cream, and cream style corn on top. It's great like this, but next time perhaps I'll add beans and crushed tomatoes.
     
  4. Used an oval deep casserole.....worked great....love this.....originally made it years and years ago.....so glad to find the recipe again!

Tweaks

  1. If you like black beans or kidney beans, you can add a can of either to the recipe for additional flavor/texture.
     
  2. I made this for lunch today and it was very tasty. The flavors were exactly what I was hoping for. I used pepper jack cheese instead of cheddar and I used recipe#281416 for the cornbread and recipe#28011 instead of taco seasoning. It all turned out really well. Thanks for sharing. Made for PAC fall 08.
