- 2 (1/3 ounce) boxes sugar-free lemon gelatin
- 1 3⁄4 cups boiling water
- 8 ounces reduced-fat cream cheese
- 3 1⁄2 teaspoons lemonade, drink mix powder (sugar free such as Crystal Light)
- 1 reduced fat graham cracker crust (8 inches)
- light whipped topping (like Cool Whip, for garnish)
directions
- Dissolve gelatin in boiling water in a small bowl. Place in refrigerator to cool but do not let it gel.
- When cool, transfer to a blender and add the cream cheese and lemonade mix; cover and process until smooth.
- Pour into the crust, refrigerate till firm.
- Serve with whipped topping.
