Taco Tortellini Salad

    ounces cheese tortellini
  • 1
    (15 ounce) can red kidney beans, drained and rinsed
  • 1
    medium tomatoes, seeded and coarsely chopped

    green pepper, coarsely chopped
  • 2
    tablespoons olives, sliced
  • 12
    cup salsa (you pick the heat, but I use "medium")
  • 13
    cup thousand island dressing
  • 12
    teaspoon cumin

DIRECTIONS

  • Cook the tortellini. Drain and rinse with cold water.
  • Combine beans, tomato, pepper and olives in a large bowl. Add tortellini and toss.
  • Make the dressing - combining the salsa, thousand island salad dressing and cumin.
  • Just before serving, pour dressing over the tortellini salad mixture and toss.
