Sweet Potatoes in Orange Cups

Found this recipe in a book from 1952. Looks really good and a cute idea for presentation. Guessing on times. Please update me if you make it! I added the cooking time of the potatoes to the recipe via microwave oven

Can I make these the night before and pop them in the oven the day of?

We love these! I make them a bit differently, though. I add condensed milk, vanilla, ginger, nutmeg, & cinnamon to the potatoes. After filling, I sprinkle the tops with chopped pecans, and bake for 20 minutes. Then I top with mini marshmallows & bake another 20 minutes. A little water in the bottom of the dish keeps them from drying out too much. Thanks!

I remember making these in the 50's. They are adorable and really taste good. I don't remember any marshmallows in this dish. I think we used a sort of streusel type topping for them. If you really wanted to be fancy you left a little handle on top with the rind.

I loved your recipe. My ony change was slice off thinly of the bottom of the orange to keep them from not tipping over.
