Sweet Potato Shepherd's Pie

- 500 g ground beef
- 1 large onion
- vegetables (of your choice, celery,mushrooms,green beans, carrots)
- 1 (400 g) can tomatoes with juice
- 1 tablespoon Worcestershire sauce
- 1 teaspoon grainy mustard
- 1 cup chopped fresh parsley
- salt and pepper
- 6 kumara or 6 sweet potatoes, mashed with little bit of butter and milk
directions
- Preheat oven to 200C degrees.
- Heat non stick pan, add a little water and saute mince and onion until mince is lightly browned.
- Add vegetables, tomatoes and juice, worcestershire sauce, mustard, parsley and salt and pepper.
- Place mixture into ovenproof dish and top with mashed sweet potato.
- Bake at 200 for about 20 minutes.

At our house, when I make Shepherd's Pie, I get these "Not the same old, same old" looks. Not this time! This was really delicious! I used a mix of 250 grams ground beef and 250 grams ground turkey, left out the Worcestershire sauce completely (we don't like it at all), and used a veggie medly of mushrooms, carrots and pumpkin. I shredded the pumpkin in large strips so the orange motif ran throughout the meat. Another trick I did was to heat the oil and first just put in the mustard seeds. After they stopped popping (cover that pan) I added the meat and then the veggies. The popped mustard seeds add such a wonderful flavor. I flavored the mashed sweet potatoes with some margarine and soy milk. I adore this dish, it's a great lunch, or a very homey supper. Eve, thanks so much for posting this!

Had this for dinner last night and lunch today! I need to tweak it a bit for us as I found it a bit bland. I only had carrots and green beans this time. It was great the next day for lunch! Next time I will add more Worcestershire Sauce and Mustard and maybe a dash of chilli. I don't think I added enough salt and pepper either. I will make sure my veggies are cooked before putting in the oven dish and baking. I will also use a fork to give texture to the sweet potato and make it more crispy after baking. Oh ya almost forgot I used all turkey mince and will do this again. I think turkey has more flavor so I use it in place of all beef mince.
