  1. I made this for a New Years brunch at a friends house who happens to be vegetarian. I made a vegetarian version by subbing Smart Bacon, bacon substitute for the bacon. I used canned whole peeled plum tomatoes that I chopped up instead of fresh because you can't buy a decent tomato in NY in Jan. I followed the rest of the recipe and it turned out fantastic. I served it over white rice and it was a big hit. I can't wait to try it with bacon.

  2. Your recipe sounded like a winner and it was! I live in the south now but grew up on the west coast. I have embraced the southern cuisine and this is a great example. Lots of fresh vegetables with the right amount of seasonings simmered with bacon. I had some turkey kielbasa in the freezer so I sliced it and browned it with the bacon. My family likes their dishes "meaty." Thank you and thank Suzy. Really good eating on New Year's Day.
