ingredients
- 2 cups surimi (cut into 1 inch pieces, I cut smaller)
- 2 tablespoons sour cream
- 2 tablespoons mayonnaise
- 2 tablespoons fresh lemon juice
- 1 dash tabasco hot pepper sauce
- 3 tablespoons minced scallions
- 1 1⁄2 tablespoons chopped shallots or 1 1/2 tablespoons chopped onions
- 1⁄4 teaspoon salt
- 3 -4 cups mixed salad greens
- 3 oil-cured olives (I actually used Kalamatas)
directions
- Combine all ingredients except the salad greens in a medium bowl. I reduce the surimi into smaller flakes or pieces, but it's up to you.
- Divide the greens among four plates, top with greens.
- I often add other herbs - garlic chives, thyme or lemon thyme, dill. I also omit the salt - surimi is salted, and I really don't think the salad needs additional salt, but do it to your taste.

My screen name is a diminutive in Lithuanian for bread, so you won't be suprised to learn that I love to bake bread. In recent years I have been baking a lot of sourdough breads and have several starters sitting in my refrigerator. But I like to cook a lot of other things, as well, especially from various cultures. The cat wishes I would concentrate on meat and fish... I joined a few years ago but started posting recipes and participating in forums just recently - I wish I had done so earlier.
