Summer Watermelon Mojito

"This recipe came from my friends Wendy and Robin. They are fabulous, the recipe is fabulous. Coincidence? I think NOT. :-) If you want to make 1 or 2, just keep the watermelon chunks in the freezer until they're ready to use and muddle them in the glass or throw in a small blender or food processor."

  • In the bottom of a large shaker, muddle the mint, sugar and 1/4 cup of the lime juice.
  • Fill the shaker with ice.
  • Add the rum, watermelon and the remaining 1/4 cup of lime juice; shake well. Strain into old-fashioned glasses over ice.

I've been on a huge baking kick lately, which is great for my college-aged brother and my friends. And BAD for my sweet tooth. Besides baking, I have been learning a lot about wine pairings and recipes. My local sommelier, Mary, is GREAT: Knowledgeable and sweet.
