  • Cook the chicken breast over a barbq and leave to rest.
  • Boil some water and soften the noodles and leave to cool.
  • In a large bowl put in the chopped cilantro, sliced scalliions, bean sprouts, bell pepper.
  • Chop the noodles when cooled and add to bowl.
  • Shred the chicken and add to salad.
  • Dice the mango.
  • Season and sprinkle with lime juice and some chilli.
