Stephyo's Tuscan Bruschetta

"So yummy!!! This will impress your guests and very simple to make. I came up with this for a party once and have been making it ever since!"

• Ingredients: 10
• Serves: 8-12

ingredients

• 1 loaf crusty French baguette
• 2 tablespoons olive oil
• 1 red bell pepper, roasted and chopped
• 1 small eggplant, diced
• 1 tablespoon sun-dried tomato packed in oil, chopped
• 1 garlic clove, minced
• 1 teaspoon dried basil
• salt & pepper
• 1 cup mozzarella cheese, shredded
• garnish with green olives (optional)

directions

1. Slice bread into one inch slices.
2. Heat olive oil in medium sauce pan over med/high heat.
3. Add all ingredients to pan except cheese saute for about 12 mins.
4. Place each slice of bread on cookie sheet and top with shredded cheese and a tablespoon of sauce pan mixture and garnish with olives
5. Heat oven to 425 degrees. Bake about 12-15 mins.
