- 1 cup plum tomato, chopped
- 11 ounces mandarin orange segments, drained
- 1 cup green pepper, chopped
- 1⁄4 cup red onion, chopped
- 1⁄2 teaspoon crushed red pepper flakes
directions
- Combine all ingredients in a medium-size bowl and mix well.

We really enjoyed this quick and easy to make salsa. It was very fresh tasting with bursts of sweetness and heat. I did double the red pepper flakes for my dh and I also added a little ripe mango, that I didn't want to lose. All the flavors and textures blended beautifully creating a special treat. I served with corn scopes, it was so good. I have placed this recipe in my keeper box, thank you so much for sharing this sweet & spicy treat.

Very tasty salsa, although the red onion overpowered DH somewhat, and he proposed that I add some cilantro next time. I loved the fresh taste to accompany some heavier flavors at dinner. This salsa was very good. The flavor was just right, with a little bit of a kick but not too much. The colors are absolutely gorgeous. I found that this was best when made and served on the same day. I saved a couple of tablespoons to use the next day in a quesadilla. While the flavor was still good, the fresh ingredients had wilted alot.
