  • Placde 1 inch water in saucepan, add carrots. Bring to boil. Reduce heat; cover and simmer for 7-9 minutes, or until crisp tender. Drain.
  • In small bowl, combine sugar, ginger and nutmeg. In greased 1 1/2 quart baking dish, layer half the apples and carrots. Sprinkle with half the sugar mix. Repeat layers. Dot with butter.
  • Cover and bake at 350 for 30-40 minutes, or until apples are crisp-tender and carrots are tender.

  1. This was so good!! I used canned carrots and skipped the first step b/c I didn't have any fresh ones. I also didn't have ground ginger, so I chopped up one small piece of candied ginger. And I doubled the brown sugar b/c 1 tblsp wasn't enough to sprinkle on 2 layers. Delish! My uber-picky 5 and 3 year olds ate it UP!! I hope you try it!
