Soy-Marinated Chicken Thighs

2 chicken thighs

ingredients
- 3 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 teaspoon dried thyme (original recipe calls for 2 t fresh)
- 8 boneless skinless chicken thighs
- 2 garlic cloves, minced (I used several more!)
- cooking spray
directions
- Combine the first 5 ingredients in a ziploc bag and seal. Marinate in the refrigerator for 4-24 hours.
- Prepare grill to medium high heat.
- Place chicken on sprayed grill rack and discard marinade.
- Grill 3 minutes on each side until done. This took me about 15 minutes.

I marinated for about 7 hours, and I thought mine were a little bit salty. I used low sodium soy sauce, so next time I'll reduce the soy sauce just a bit. These turned out so moist and tasty.....We really enjoyed these. I grilled on a charcoal grill exactly as posted in the recipe, and they turned out perfectly. These are so juicy and delicious! Thanks for sharing!

Very delicious and very very easy!!! The one thing I didn't have was the thyme, but it was fantastic without it so that's OK. I doubled the recipe and marinated this since last night ~ it was very moist tonight. We are away on holidays and we expected to eat earlier than when we did. I grilled the chicken until just before it was cooked through and then put in a 9" x 13" baking pan covered with foil. I placed it in a 250F oven for about 1 hour and it was terrific. I served it with Recipe #366973, one of my mashed potato recipes and a green salad. Made for Newest Zaar tag. Thanks! :)

I live in Knoxville, TN with DH, my beautiful son, and the most spoiled cat on the planet! I grew up in Cincinnati and landed in TN by way of Bloomington, IN and Santa Fe, NM. Needless to say, it's been a long, strange trip!!
To explain the name: I was veg for 11 years, vegan for 1. In the last year or so I started eating poultry and fish again, but my brother-in-law's nickname for me (smelly vegetarian) has always stuck.
