- 1 cup butter
- 3⁄4 cup sugar
- 3⁄4 cup brown sugar
- 1 teaspoon vanilla
- 2 eggs
- 2 cups flour
- 1 cup graham cracker crumbs
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon cinnamon
- 1 1⁄2 cups mini chocolate chips
- 2 -3 cups mini marshmallows
- 2 -3 Hershey Bars, chopped
- 4 graham crackers, chopped
directions
- In a medium bowl cream together butter, sugar and brown sugar. Add vanilla. Beat in eggs one at a time. In a separate bowl combine flour, graham cracker crumbs, baking soda, salt and cinnamon. Pour into creamed mixture, and stir together until combined. Stir in mini chocolate chips. Drop by rounded tablespoon onto an ungreased cookie sheet. Bake at 375 for 8 minutes. Remove from oven, and decorate tops with marshmallows, chopped Hershey bars and chopped graham crackers. Turn your oven on broil. Place cookies back in the oven. WATCH CAREFULLY - don't walk away. Broil until marshmallows are light brown. Cool cookies on cookie rack. Optional: drizzle with melted chocolate.

I made these with my 7 year old, and instead of buying graham cracker crumbs, I let him smash about 5 crackers up in a zip lock bag. He loved it. We used cinnamon graham crackers, and it turned out great. <br/><br/>I gave four stars because (and maybe it is just my oven) it was hard to time the cookies right with the added broiling. If I took the cookies out and added the toppings at the recommended 8 minutes, then the additional broiling made them too brown and crunchy for my liking. When I tried 6.5 minutes, the middle of the cookies weren't quite done. Once I figured out the right timing though, the cookies came out great, and they are delicious.
