Smashed Cream Cheese Potatoes

"My son and I saw this on a PBS cooking show (Test Kitchen) and thought that it looked good so we tried it and loved it. I would use this as a base recipe and then added whatever you want afterwards like a package of ranch or bacon. Hope you enjoy. Cooking time will vary."

  • Boil the whole potatoes in salt water.
  • Remove them from the water and allow to dry (it will only take a couple of minutes) Do not pour out all the water. Save about 1/2 cup.
  • While they are drying, mix the rest of the ingredients and the 1/2 cup of the potato water. I use a hand mixer for this and that really helps.
  • Then, with a spatula or a wooden spoon, simply smash the potatoes. Just enough to break open to spud. Do not mash. Your goal is to have potato chunks.
  • Fold the cream cheese mixture in with the potatoes.
  • Season to taste.

  1. These were delicious and easier than mashed potatoes. Using red skinned potatoes makes it very pretty.
     
  2. Add this to my preferred comfort foods list. I used garlic and dill cream cheese and resisted the urge to mash the potatoes. My daughter remarked that this was a hot, creamy potato salad. Most of the family ate it just as it, I added a bit of a cayenne pepper dusting as I like my food spicy, even my comfort food. Thanks!
     
  3. terrific recipe. tried this today for dinner later as i have to have everything ready early today, and they were delicious. my 3 yr old daugther even loved them and she is not a mashed pot. fan. very simple recipe; short list of ingredients but delicious end result. will make again. thanks for sharing.

  5. So good...definite comfort food. I used 8 potatoes, left the jackets on 4 and peeled the other 4. I did cut back on the salt but even with the alterations that I made, these were still wonderful. :)

Newly updated: Now, just my wife works and I am the stay-at-home-dad. So I have taken on the wonderful job for cooking for our on the go family. I am loving it. We live in far NE Colorado. We enjoy camping, gardening, and raising a few animals for the freezer (pigs). I really don't have a favorite cookbook. but if I did, it would consist of easy, quick and kid friend reicpes, like what I find here. My passion is horticulture (thus, my garden).
