Skinny Soup - Ww

"This is an easy soup that is very, very low in calories and low in fat. I am following weight watchers and this soup is zero points (I think). You can add any veggies you want. I have made several variations of this. Basically, whatever I have on hand."

  • Saute celery and onion using cooking spray.
  • Add tomatoes, soups and water.
  • Add taco mix and garlic.
  • Let simmer partially covered for about 1 hour.
  • Add the green beans and simmer another 15 minutes.
  • Top with parmesan, or low-fat cheese then put a dollop of fat-free sour cream on top.

I can't really review this recipe because I made my normal vegetable soup recipe.. basically just putting together whatever vegetables I have on hand and some crushed tomatoes and broth with my spaghetti sauce spices.. but I added the taco seasoning mix as suggested in this recipe and it is a wonderful addition.
     
  2. We enjoyed this soup. My granddaughter ate two bowls of it. I left the table feeling full. I will definitely make this again.
     
  3. Easy and very tasty. This came together while I was making something else and we enjoyed it as a first course with dinner. i added a minced chipotle pepper and some cabbage to thicken it up since I had no green beans. I will freeze this to take for lunches. Thanks.
     
  4. I just finished having this for lunch and wanted to review it while the taste is still on my tongue. This is a triple AAA recipe. I am sure glad that I more than doubled this! I made some minor changes which would not affect the taste. 1. I used up some fresh tomatoes I had. 2. I have LOTS of homemade chicken broth(saltfree), so I used that. The only thing I will do differently the next time, is to coarsely chop my celery and add it in the last 15-20 minutes so there is a bit more crunch. Thanks, Mary for a keeper!
