Simple Mushroom Barley Soup

ingredients
- 1⁄2 cup pearl barley, washed
- 4 cups chicken stock (homemade or low-sodium canned)
- 2 cups beef stock (homemade or low-sodium canned)
- 1 small onion, chopped
- 2 small celery ribs, chopped
- 2 carrots, finely diced
- 1 lb sliced fresh mushrooms
- soy sauce, to taste
- black pepper, to taste
directions
- In a Dutch oven or heavy stockpot, bring first 5 ingredients to a boil. Lower heat and simmer, covered, for 1 hour.
- Add remaining ingredients, and simmer, covered, until carrots are tender (30-40 minutes). Season with additional black pepper, to taste.

I was looking for a similar recipe to one I tried on another site Here is some of the changes I made I used 6 cups water and 2 Tbs. better than boullion chicken flavor I used a squeeze of lemon juice and later added a sprinkle of salsa seasoning to the bowl of soup I was eating. I am almost tempted to make this a 5 star recipe but dont really know how similar my verson is to the intended recipe.Oh I did not use any beef stock
