ingredients
- 1 lb ground beef
- 1 bell pepper
- 1 medium onion
- 1 tablespoon fat (oil, ghee or butter)
- 1 tablespoon minced garlic
- 1 teaspoon cumin
- 1 tablespoon chili powder
- 1 teaspoon oregano
- 2 cups beef stock or 2 cups beef bone broth
- 1 (14 1/2 ounce) can diced tomatoes
- salt and pepper
directions
- Add fat to pan and sautee onion and pepper for 5 minutes.
- Add garlic and sautee for 1 minute or until fragrant.
- Add ground meat and cook through.
- Add remaining ingredients and simmer for an hour or until thickened.
- Serve with optional toppings: avocado, shredded cheese, chopped onions, egg, sour cream.
