Shrimp Chip and Vegetable Dip

My friend Keile gave me this recipe many years ago and I love taking it to gatherings. It makes a ton but you can easily half the recipe. So easy but so good.

ingredients
- 1 (16 ounce) carton cottage cheese
- 8 ounces sour cream
- 1 cup mayonnaise
- 1 1⁄2 tablespoons hidden valley ranch dressing mix (dry mix)
- 2 (4 ounce) cans medium shrimp, drained and rinsed
directions
- Mix together all of the ingredients except the shrimp.
- Carefully fold in the shrimp so it doesn't break up.
- Serve with potato chips or cut vegetables.

I was extremely unsure of this one. The cottage cheese scared me off but... no guts, no glory. This was a fabulous pre-thanksgiving feast appetizer. We gobbled it up. We had it with chips but it would be great with crackers or veggies. I only used a couple of tablespoons of mayonnaise and that seemed to be all it needed for us.

This dip is delicious! I prepared 1/2 of the recipe as it was just DH and myself partaking of it. I could only find tiny shrimp, but I don't think this detracted at all from the flavor. This is so easy and tasty, you should not hesitate serving it to guests, especially if you host sports parties. I believe the cottage cheese, sour cream and mayo mix of this dip would be a great base for any herbs or spices you may prefer for a different taste. I know it was certainly good before I mixed in the shrimp. I served with with vegetable tortilla chips. This is definitely a keeper! Thanks Kathy !! Prepared for Spring PAC 2007
