  • 2 tablespoons yeast
  • 2 teaspoons yeast
  • 1 14 cups warm water
  • 1 78 lbs flour
  • 12 cup nonfat dry milk powder
  • 2 tablespoons sugar
  • 2 teaspoons sugar
  • 1 tablespoon salt
  • 14 cup vegetable oil
  • 25 sausage links (Knockwurst)
  • 25 slices American cheese
  • 14 lb margarine

directions

  • Dissolve dry yeast in warm water. Let stand for (4-5) minutes.
  • Place all dry ingredients (flour, dry milk, sugar and salt) in mixer bowl.
  • Using a dough hook, blend on low speed for approximately (2) minutes.
  • Add oil and blend on low speed for approximately (2) minutes.
  • Add water. Mix on low speed for (1) minute.
  • Mix dough on medium speed for (8) minutes, or until dough is smooth and elastic.
  • Place dough in warm area (about 90°F) until doubled in size.
  • Punch down dough to remove air bubbles.
  • Cut 2" rolls (2 oz). Flatten with hand to make dough spread; place a sausage link and 1 slice of cheese in center of dough and fold over to close in sausage and cheese.
  • Bake at 350°F until lightly browned. (Oven temperatures may vary).

  1. This is a good recipe. The flour measurement is 6 3/4 cups. This was too much flour. When following the directions as written, the dough did not come together because it was too dry. I added probably another 1/2 cup of warm water. Next time I will start out with about 5 cups of flour and add until it makes a good dough. I only used 1/2 slice of cheese for each kolache. The finished product was very good.
