- 1 carrot, grated
- 1⁄2 red onion, diced
- 1⁄2 green bell pepper, diced
- 1⁄4 cup lemon juice

- salt & freshly ground black pepper
- 1⁄4 cup fresh parsley leaves, freshly chopped
