DIRECTIONS

  • Pour the olive oil into a heavy based pan and spread around with kitchen paper. Heat the pan.
  • When hot, add a flour tortilla and cook both sides (about 2 minutes each side) over a medium heat.
  • Remove the cooked flour tortilla and keep aside.
  • Push the salsa through a sieve to drain off as much liquid as possible.
  • Place the remaining flour tortilla in the pan and spread over the drained salsa.
  • Sprinkle over the grated cheese and then placed the previously cooked tortilla on the top.
  • Cook the quesadilla until the cheese melts (about 3 or 4 minutes).
  • Cut into segments and serve hot.
