ingredients
- 1 lb boneless salmon fillet, seasoned with
- salt and pepper
- 3⁄4 - 1 cup store bought pistachio pesto sauce (or Pistachio Pesto Pistachio Pesto)
directions
- Spread pesto on top of salmon fillet skin side down.
- roast at 450 degrees on parchment paper for about 10-15 minutes begins to flake when pressed with a fork.

I have never seen Pistachio pesto sauce in the store, so I just made my regular basil pesto sauce and added pistachio nuts instead of pine nuts. Also added the lemon zest which I don't normally do and it made a wonderful tasting sauce. The salmon came out so moist and was super delicious. Thanks for a great easy recipe, Rita.
