Salmon and Herb Penne(Flat Belly Diet Recipe)

I haven't tried this one yet, but it sounded delicious. Fresh grilled salmon would take it to the unbelievably delicious level, I think. If you're using grilled salmon, just cook the other ingredients as posted and throw in the salmon right before mixing in the pasta. I wouldn't leave out the wine.   • 1. PREPARE pasta per package directions.
  • 2. HEAT oil in large skillet over medium-high heat while pasta cooks. Add tomatoes and cook 1 to 2 minutes. Raise heat to high and add wine, salmon, basil, oregano, garlic and capers and cook until salmon is just opaque, about 4 minutes. Or cook other ingredients and add grilled salmon with pasta in step 3.
  • 3. DRAIN pasta and add to skillet. Toss with tomatoes and salmon to combine. Divide equally among 4 bowls. Sprinkle with additional basil and oregano, if desired.
  • Nutritional Info Per Serving.
  • 385 cal, 21 g pro, 25 g carb, 3 g fiber, 20 g fat, 2.5 g sat fat, 47 mg chol, 111 mg sodium.

    Excellent! I grilled the salmon separately, therefore, I only used less than 1 TBSP of oil to cook the garlic & tomatoes; making this already healthy meal even healthier. The sauce is outstanding! If I weren't dieting, I could see serving crusty bread along side of it. Great meal!

    Delicious! I also used grilled salmon, although mine was not a leftover. Also used all the tomatoes I had, because I wanted a lot in the dish. I also had to use regular penne, as the store I have to shop at didn't carry the wheat penne. Couldn't get much healthier. We will enjoy salmon this way again.     Very good and so healthy! I did use leftover grilled salmon for this otherwise made as posted with the white wine. Thank you Heartsong for sharing. Made for Fall PAC.
