Carrot-Walnut Salad

- 1⁄3 cup golden raisin
- 2 tablespoons rice wine vinegar
- 1 tablespoon canola oil
- 2 tablespoons lemon juice, freshly squeezed (about 1 lemon)
- 1 teaspoon honey
- 1⁄8 teaspoon salt
- 4 large carrots, grated
- 1⁄2 cup walnuts, toasted and chopped
- 1⁄4 cup fresh Italian parsley (chopped)
directions
- Soak Raisins in hot water for 20 minutes to plump them, then drain.
- In small bowl, whisk together the vinegar, oil, lemon juice, honey, and salt.
- Combine the carrots, walnuts, parsley, raisins, and vinegar dressing in a medium bowl and toss to coat.
- Divide evenly among 4 salad plates.

This was really good! It was a bit sour for my taste, but my husband and I both thought it was a great way to eat carrots (and my 3-year old loved it too). I added 2 T of canola mayo and a bit more salt, plus I added almonds and brown raisins instead of golden raisins and walnuts. I didn't have any parsley, so I just skipped that. Thanks for posting!

I live in Herndon, VA with the oldest of my 6 sisters. We take turns cooking on a weekly basis. I get many "repeat dinner" requests from my sister and co-workers, though and a lot of them are from here. This is abso-tively, posi-lutely my most favorite recipe site!
