Ridiculous Salisbury Steak

"A ridiculously yummy comfort food. The recipe is easy but takes some preparation. You can always go an easier route and pick up pre-chopped veggies (like onions, peppers and mushrooms) from the grocery."

  • Saute onions and peppers in 2 tablespoons olive oil over low in a large skillet until soft and lightly caramelized. Let cool.
  • Combine beef, potato flakes, sauteed onion and pepper, half the onion soup mix and 1 teaspoons Worcestershire Sauce. Mix well and form 6 oval patties about an inch and a half thick.
  • Heat 2 tablespoons olive oil in the same pan used to saute onions at medium heat and add patties once hot.
  • Brown patties on both sides and then remove from pan, set aside.
  • Add mushrooms to the pan. When lightly browned, turn heat to low and add patties back to pan.
  • Mix warm water, ketchup, remaining onion soup mix, corn starch and 2 teaspoons Worcestershire Sauce. Add to pan, stir and cover. Cook for 20 min low.

Entertaining for as long as I can remember. I love a dinner party, though I barely have time for a simple family dinner these days.
