- 3 cups cooked and diced chicken breasts
- 1⁄2 cup finely diced celery
- 1 cup mayonnaise
- 1⁄2 cup heavy cream
- 1 dash white wine vinegar
- salt
- toasted slivered almonds or sliced almonds
directions
- Whisk the mayo, cream, vinegar and salt in a large bowl until smooth.
- Add the chicken and celery and mix well.
- Check the taste and add vinegar or salt as needed.
- Garnish with the toasted almonds.

I had a chicken salad in the Neiman Marcus store in Honolulu and it has always been one of the nicest lunches I have ever had, so when I saw this recipe I wanted to relive those happy memories. This salad is so simple to make but the flavours make it a first class dish. I used sliced almonds served in a lettuce cup and decorated with tinned mandarin pieces. Thanks for sharing this lovely dish.
