ingredients
- 3 -4 tablespoons red curry paste
- 1 1⁄2 cups coconut milk
- 2 tablespoons brown sugar
directions
- Whisk all ingredients in a small saucepan until blended. Add more curry to taste; be careful, a lot goes a long way.
- Heat over medium-low until bubbling. Reduce heat and simmer 5 minutes.
- Pour over fish, rice, and vegetables.

Versitile, easy, and delicious! What more could anyone ask for? I used 3 tablespoons of the red curry paste and it was just right for us. Stir fried a bunch of veggies that I had on hand (onions, bell peppers, celery, water chestnuts and hearts of palm) , then added the sauce ingredients and stirred. Served with basmati rice and pan grilled tilapia.
