  • Preheat oven to 350 deg.
  • In saucepan, combine raspberries and cornstarch; cook and stir until thickened.
  • In bowl, beat egg yolk; stir in sweetened condensed milk, ReaLemon juice and food coloring if desired.
  • Pour over crust; bake 8 minutes.
  • Spoon raspberry mixture over top.
  • Chill 4 hours.
  • Spread with whipped topping.
  • Garnish as desired.
  • Refrigerate leftovers.

  1. This is delicious. It works for other berries. If you cannot find the berries in syrup you can make your own. Just use frozen berries and add 3/4 cup sugar. Heat in saucepan until sugar turns to liquid. Easy peasy.

I am married and have three children ages 9 to 16. I work full-time so between work and attending as many school functions as I can possibly fit in, I have little time to prepare "gourmet" type dishes which require a lot of preparation time. I like tasty, quick-fix meals that use ingredients that are usually in my house and don't require an extra trip to the store.
