ingredients
- 2 cups pancake mix
- 3 tablespoons brown sugar
- 2 1⁄2 teaspoons pumpkin pie spice
- 1 1⁄2 cups milk
- 1 cup canned pumpkin puree (not pie filling)
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 tablespoon vegetable oil
directions
- In large bowl combine pancake mix, sugar, and pumpkin spice. In another bowl mix milk, pumpkin, egg, vanilla, and oil. Add pumpkin mixture to the dry ingredients and stir well to combine. Heat your lightly oiled griddle or frying pan on medium heat, pour about 1/4 cup amounts for each pancake, more if you want big one's. Cook until bubbles start to form in pancake and sides start to brown, then flip till lightly browned, serve with pure maple syrup and mmmhhh enjoy !
