Pumpkin and Sage Patties

  • Bake the pumpkin wrapped in foil for 50 minutes in a 250 degrees C oven, until softened.
  • Puree the pumpkin, add the crushed amaretti biscuits, parmesan, mustard, flour and eggs. Season with salt and pepper.
  • Butter a cupcake pan and spoon the mixture into the holes. Top each pattie with a leaf of sage, sprinkle a little more parmesan cheese
  • Bake in a 250 degrees C ,pre-heated oven for 8 -10 minutes or until golden.

I live in a beautiful village on the island of Malta ( Europe) with my wonderful daughter, partner and two cats. I love the vineyards infront of my house or walking down to the valley of olive trees. ( I do pick olives every year) Some years ago I stopped working as a chef but still do a lot of home cooking. What I miss are the expensive ingredients I worked with, its rather hard cooking on a tight budget.
