  • Preheat oven to 350°F.
  • Mix all ingredients, soften the butter and add the flour last.
  • You may need to put the dough in the freezer if it is not firm enough, or you can just continue.
  • Roll into 1" balls and roll them in sugar.
  • Place on a greased cookie sheet and bake for 7-8 minute.

  1. I was really disappointed with this recipe. I found the exact same recipe elsewhere on the internet, but it only had 2 cups of flour, which is much more appropriate. I had to add some oil and another egg to get these to work at all.
     
  2. So yummy! I am pregnant and they are a perfect sub for store bought gingersnaps when i am nauseous. Thank you for a "healthy" recipe!
