DIRECTIONS

  • Boil potato's until just tender. Allow to cool for only about 10 minutes.
  • Skin potato's and chop up in a bowl. Make sure you cut large pieces as they break down some when being mixed while hot.
  • Put in chopped eggs and green onions. If you do not like onions then leave them out or substitute chives instead.
  • Mix together the rest of the ingredients and pour in to mix all together. All measurements are aprox and to taste. Can serve immediately or chill. This is best when mixed while the potatoes are hot to blend the mayo and things together.
