- 2 tablespoons butter
- 2 medium leeks, chopped
- 1 small onion, chopped
- 1 carrot, chopped
- 2 stalks celery, chopped
- 4 cups chicken broth
- 2 cups water
- 4 medium potatoes, chopped
- 1⁄2 teaspoon celery seed
- 3⁄4 teaspoon dried thyme
- 1⁄4 teaspoon basil
- 1 cup milk
- 1⁄2 cup white wine
- salt and pepper
- 1⁄4 cup chopped parsley
directions
- Saute leeks, onion, carrot and celery in butter in a stockpot or large saucepan.
- Add chicken broth, water, and potatoes and bring to boil.
- Simmer 15 minutes.
- Puree mixture in batches in blender, and return to pot.
- Add milk and wine and reheat.
- Add salt and pepper to taste.
- Serve topped with parsley.
