ingredients
- 1 medium potato, boiled and mashed (no salt)
- 2 tablespoons butter
- 1⁄4 lb sweetened flaked coconut
- 1 teaspoon vanilla extract
- 1 lb powdered sugar
directions
- Combine all ingredients in a large bowl.
- Roll into logs and wrap in wax paper.
- Store in refrigerator.
- Cut in slices to serve.

I have been making this recipe for years, It is so yummy. I sometimes substitute the vanilla extract for other flavor extracts such as mint, orange, hazelnut, rum....... For Easter I roll the mixture into little balls and roll them in melted chocolate, then refrigerate them so the chocolate hardens, the kids LOVE them.

This candy was a little too sweet for me. The mixture itself was a little thin after I mixed it all up so there was no rolling in wax paper (could be because I mixed it with a hand mixer rather than by hand). I left it in the bowl for a few hours and put it in the fridge to harden then roll in wax paper. I put some festive sprinkles on since DS loves them. Made for 123 Hits.
