Pink Coconut Candy

I got this recipe from my mother. When I was in grade school, we used to make these every Christmas as gifts for my teachers--they're a great project for kids to help with. Pink with strawberry flavoring is traditional, but you can experiment with other flavors and colors too. Yield is estimated.

Good candy! I used pink gel food coloring and put the mix in a ziplock and piped it out onto parchment paper. I could never get them to harden up. I stuck them in the fridge for a couple hours after leaving them on the counter for 5 hours and they're still soft...but they taste great! Thanks for posting!
