Pineapple Coleslaw

"The original recipe is for apples but my friend and I were doing a Pineapple themed dinner so I changed this one; I made this one with my daughter, a great way to teach her veggies."

• Serves: 8

ingredients

• 1⁄2 small purple cabbage, in fine julienne
• 2 celery ribs, in fine julienne
• 2 carrots, pared and in julienne
• 1 red pepper, in julienne
• 1⁄2 English cucumber, sliced in fine julienne
• 1⁄2 onion, finely sliced
• 2 tablespoons Dijon mustard
• 2⁄3 cup mayonnaise
• 2 tablespoons sour cream
• 2 minced garlic cloves
• 1⁄2 cup drained pineapple tidbits
• chopped walnuts (to garnish)
• salt and pepper

directions

1. · Place all your cut julienne vegetables in a large bowl. Sprinkle with pineapple juice.
2. · In a separate bowl mix, Dijon mustard, mayonnaise, sour cream, garlic and crushed pineapple.
3. · Pour dressing over vegetables and mix well.
4. · Season with salt and pepper.
5. · Garnish with chopped walnuts.
