ingredients
- 1⁄2 small purple cabbage, in fine julienne
- 2 celery ribs, in fine julienne
- 2 carrots, pared and in julienne
- 1 red pepper, in julienne
- 1⁄2 English cucumber, sliced in fine julienne
- 1⁄2 onion, finely sliced
- 2 tablespoons Dijon mustard
- 2⁄3 cup mayonnaise
- 2 tablespoons sour cream
- 2 minced garlic cloves
- 1⁄2 cup drained pineapple tidbits
- chopped walnuts (to garnish)
- salt and pepper
directions
- · Place all your cut julienne vegetables in a large bowl. Sprinkle with pineapple juice.
- · In a separate bowl mix, Dijon mustard, mayonnaise, sour cream, garlic and crushed pineapple.
- · Pour dressing over vegetables and mix well.
- · Season with salt and pepper.
- · Garnish with chopped walnuts.
