Pear Craisin Bread

ingredients
- 3 eggs
- 1 1⁄2 cups brown sugar
- 1 cup white sugar
- 1 cup oil
- 1 teaspoon salt
- 1⁄4 teaspoon baking powder
- 1 teaspoon baking soda
- 3 teaspoons cinnamon
- 3 teaspoons vanilla
- 3 cups flour
- 4 cups pears, peeled, cored, and chopped up
- 1 1⁄2 cups pecans, chopped
- 1 cup craisins
directions
- Heat oven to 325°F
- Mix all wet ingredients with mixer; add the dry ingredients and finally mix in the pears, nuts and craisins.
- Grease 2 loaf pans, divide the dough between the 2 pans.
- Bake for 1 hr 15 min to 1 hour 30 min or until a toothpick inserted comes out clean. The bread does have a dark appearance so don't be alarmed by that.

Very moist and flavorful. I subbed Splenda for the white sugar, but kept the brown sugar. I might cut down the amount of brown sugar next time, also. Since I only made 1 loaf, and couldn't find a half an egg :) I used 1/8 cup yogurt for the half egg. I used fresh pears. I am going to try this again with dried cherries instead of Craisins. Also might add some cardamom, since cardamom and pears are meant for each other! Thanks for a keeper.
