  • Blend all three ingredients together until a smooth dough forms. Form 1 inch balls with dough, then place onto an ungreased cookie sheet about an inch apart. Do not press down with a fork. Bake at 350 degrees for 7-10 minutes. Remove from oven and immediately press 4-5 chocolate chips into the center of each cookie. Let cool 10-15 minutes before eating.

I was diagnosed with Celiac Sprue about 4 years ago and since then i have been on a search for YUMMY Gluten free recipes. Yummy being the operative word of course. I could never find any easy prep meals that were gluten free and by easy prep i mean microwave dinners, hamburger helper, even the boxed potato side items have gluten in them ( that was really disappointing). So I have come up with a few of my own recipes that are gluten free. Granted some of my recipes are common ones that i have taken and done variations on to make them gluten free but, they are still yummy and thats what matters to me. If you have any good gluten free recipes that you would like to share with me I'd appreciate it.
