Crust
- 1 1⁄4 cups Bisquick baking mix
- 2⁄3 cup sugar
- 2 ounces ground almonds
- 1⁄4 lb cold butter, cut up
- 4 large fresh peaches
- 3⁄4 cup sugar
- 1⁄4 cup brown sugar
- 3 tablespoons lemon juice
- 8 ounces peach jam (or preserves)
- water, if needed
- 2 tablespoons brown sugar
- 2 ounces chopped nuts
directions
- Preheat oven to 400°.
- Make crust: Mix Bisquick, sugar and almonds.
- Cut in butter until well blended, or mix in food processor.
- Press into bottom of lightly greased or lined 9"x13" baking pan.
- Bake for 12-15 minutes, until beginning to brown.
- Cool slightly.
- While crust is baking, peel, pit and slice the peaches.
- Combine with sugar, brown sugar, and lemon juice, and toss to mix.
- Stir preserves to ensure spreadable consistency. Add a small amount of water if necessary.
- Spread evenly over warm crust.
- Arrange peach slices evenly over jam.
- Combine brown sugar and nuts and sprinkle over top.
- Return to oven and bake for 30-45 minutes, until edges are browned and bubbly and peaches have begun to soften.
- Cool and slice into squares.

Couldn't find any nice peaches for this recipe so used 5 not-so-large peaches from canned halves! It worked well enough for me, but would certainly like to try this another time with fresh fruit! Still this recipe makes for a very tasty peach treat! [Tagged, made & reviewed for one of my adoptees in the current Pick A Chef]
