- 3 cups boiling water
- 1⁄2 teaspoon kosher salt
- 3 cups frozen peas
- 1⁄2 - 1 teaspoon lime juice
- 2 scallions
- 4 tablespoons prepared basil pesto
directions
- Combine water, salt, peas, lime juice and scallions in a saucepan. Bring to a simmer and cook until peas are tender, 3-5 minutes. Remove scallions and discard.
- Transfer soup to a blender. Add pesto and process until smooth. Serve hot.

I lost 160 lbs (though I've gained back about 60 of that since). I can't eat as much as I used to, so I want every bite to be extra good!
