Patties from the Countryside

"Around september and october lambs get slaughtered here in Iceland and the fresh lambmeat tends to be quite inexpensive in the stores. You can use almost all parts of it and most is delicious, other parts i do not really like but often it is a matter of cooking them the right way. I have never been a big fan of innards but this is a great way to use up liver. you can use liver from any animal i guess but here we mainly eat lambliver. Serve with potatoes, steemed carrots and brown sauce."

  • Clean the liver, peal the potaoes and the onion.
  • Mash everything together in your food processor until chopped up and blended together.
  • Add the remaining ingredients, the batter is rather thin.
  • Mold patties and fry them on a dry, hot pan on both sides.
  • Keep them at 300°F in the oven for a couple of minutes before serving.

Originaly from Austria i moved to Iceland in 2002 after a life long longing for this country i felt at home at once and now it is the place where i belong. I am living with my wonderful husband in a nice, bright flat in the subburb of our capital, Reykjavik. I love to cook and eat healthy and i mainly use whole grain. I do not use any ready made mixes and i try to keep the food i cook close to the ingrediants i used. I am an elementary school teacher but i work in a kindergarden now and i actually prefer that field.
