- 3 zucchini
- 10 ounces chickpeas
- 5 ounces mushrooms
- 1 lb perciatelli
- 1 teaspoon olive oil
- 1⁄4 cup parmesan cheese
- 1 pinch salt
- 1 pinch italian seasoning
- 2 garlic cloves
directions
- wash 3 green zucchini and cut into slices, the quarter the slices.
- add oil to large pan and heat.
- when hot add zucchini and cook for 3-5 minutes until tender.
- meanwhile heat water to cook the pasta, Add pasta when boiling and cook until al dente. Add salt to water.
- add mushrooms and chickpeas to mixture and heat for another 2 minutes.
- when pasta is cooked take some of the water and add to your mixture, then drain the rest of the pasta.
- add enough pasta but do not add too much that it overwhelms the mix.
- Sprinkle in parmesan cheese and cook for 1-2 minutes until hot.
- Serve in bowls.
