  • wash 3 green zucchini and cut into slices, the quarter the slices.
  • add oil to large pan and heat.
  • when hot add zucchini and cook for 3-5 minutes until tender.
  • meanwhile heat water to cook the pasta, Add pasta when boiling and cook until al dente. Add salt to water.
  • add mushrooms and chickpeas to mixture and heat for another 2 minutes.
  • when pasta is cooked take some of the water and add to your mixture, then drain the rest of the pasta.
  • add enough pasta but do not add too much that it overwhelms the mix.
  • Sprinkle in parmesan cheese and cook for 1-2 minutes until hot.
  • Serve in bowls.
