  • Cook pasta according to package directions.
  • Drain tomatoes, reserve some of the oil. Cut tomatoes into strips.
  • Cook bacon in a skillet over medium high heat until crisp. Drain and crumble.
  • Drain pasta and place in a large bowl.
  • Add tomatoes and pesto. Toss.
  • Add bacon and cheese. Toss.
  • If necessary add the reserved oil.
  • Season with pepper.

  1. Very tasty. The tomatoes I used weren't packed in oil so I soaked them in hot water first. I also used red pesto. Unfortunately I couldn't find Romano cheese so I used Grana Padana instead. This dish is so quick and very good! However, the serving size seems a bit odd. I halved the recipe which was a perfect amount for 2.

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes.
