Pasta With Bacon and Tomato Pesto

- 1 lb bow tie pasta
- 1 (8 ounce) jar sun-dried tomatoes packed in oil
- 8 ounces pepper bacon
- 1 (10 ounce) jar pesto sauce
- 1 cup romano cheese, grated
- black pepper
directions
- Cook pasta according to package directions.
- Drain tomatoes, reserve some of the oil. Cut tomatoes into strips.
- Cook bacon in a skillet over medium high heat until crisp. Drain and crumble.
- Drain pasta and place in a large bowl.
- Add tomatoes and pesto. Toss.
- Add bacon and cheese. Toss.
- If necessary add the reserved oil.
- Season with pepper.

Very tasty. The tomatoes I used weren't packed in oil so I soaked them in hot water first. I also used red pesto. Unfortunately I couldn't find Romano cheese so I used Grana Padana instead. This dish is so quick and very good! However, the serving size seems a bit odd. I halved the recipe which was a perfect amount for 2.
