Pasquale's Italian Tomato Sauce

ingredients
- 4 ounces olive oil
- 1 onion (large chopped)
- 4 garlic cloves
- 1 tablespoon dried basil
- 1 tablespoon nutmeg
- 2 tablespoons sugar
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
- 4 (28 ounce) cans diced tomatoes
- 10 ounces tomato paste
- 6 ounces red wine
- 3 tablespoons butter
directions
- Heat oil in a large pot and cook onion, garlic and seasonings for 5 minutes.
- Add tomatoes, tomato paste, wine and butter.
- Simmer for 30 minutes till sauce is fairly thick, and once the golden oil floats on top you know it is done.

This was delish! I cut the oil & butter each in half to lighten the recipe, but other than that made as directed. Very easy & it tasted fabulous. I dared DH & DS to figure out the secret ingredient (nutmeg, which they don't like in anything) but neither of them could until I told them. The nutmeg & red wine were in just the right proportions to set this recipe apart from others & we really enjoyed it. I browned some ground beef & stirred that in after it simmered then served it over pasta. Thanks for sharing, Kermit!
