  • Combine 1/4 cup coconut with milk,gelatin and cornstarch in blender.
  • Blend until smooth.
  • Pour into saucepan.
  • Cook on medium , stirring until slightly thickened.
  • Remove from heat
  • Stir in vanilla and remaining coconut.
  • Form into 8 bars and set aside to cool.
  • Combine milk powder, cocoa and wax in blender.
  • Blend to soft powder.
  • Place on top og double boiler and add water,stirring to blend.
  • Add vegetable oil
  • Place over hot water (not boiling) and cook stirring until wax is completely dissolved and mixture is smooth and creamy.
  • Remove from heat
  • Stir in sugar substitute and let cool.
  • Dip bars into chocolate shaking off excess.
  • Place on lightly greased waxed paper.
  • Allow to cool
  • Wrap and store in a cool place.

  1. I WOULD have rated these a five, but wasnt struck on the chocolate. Possibly my powdered milk was old. Next time I will try with unsweetened chocolate, paraffin and diabetic sugar for the coating. The filling was excellent and quite yummy. Thanks!
