directions

  • place sweet potatoes and 2 1/3 cups of orange juice in a large saucepan or dutch oven.
  • cover and bring to a boil.
  • boil for 35-45 minutes or just until potatoes are tender.
  • drain and place in a large mixing bowl.
  • mash potatoes with the brown sugar, butter, salt, nutmeg, ginger and remaining orange juice.

  1. I made this for my family last night and it got pretty good reviews overall. I tweaked it a little to suit my family's tastes. I halved the recipe because I had 1.5 lbs sweet potatoes, but I still used 1/4 cup brown sugar and 2 tbsp butter. I added 1/8 tsp cinnamon because I thought it would go well with the other spices. Finally, I omitted the salt and only used about 1/4 cup orange juice to mash in with the finished potatoes because I didn't think it needed the full amount of liquid in that step due to the texture before adding the liquid (I didn't want it to get too soupy). One thing I did notice was that it seems to need more boiling liquid - for my 1/2 batch, I would at least keep the full recipe amount of liquid for the boiling step because all of my juice kept evaporating long before 45 minutes had elapsed. I kept adding more water (ran out of juice) as needed and probably did end up using somewhere around the 2-1/3 cups the full recipe calls for. My 3 year old loved it (had 3rds at dinner and requested it the next day). My husband thought that the orange flavor was almost a little too strong (even with the reduced amounts I was able to use), so next time I may add less juice in the mashing process or see if I can use a different liquid for that. I tasted some of the potatoes before mashing them and thought that the orange flavor at that point was a nice subtle yet noticeable flavor. Thanks for the recipe! I'm definitely going to make again and will keep playing with it to match my family's preferences.
