Orange Slow Cooker (Crock Pot) Chicken

- 1 1⁄4 lbs boneless skinless chicken thighs
- 1 large onion, chopped
- 1⁄3 cup butter
- 1⁄3 cup honey
- 2 tablespoons orange juice
- 1⁄2 orange, zest of
- 1 teaspoon ground ginger
- 1 tablespoon fresh ginger, grated
- 4 garlic cloves, mashed
directions
- Layer chicken thighs on top of onions in slow cooker.
- Melt butter and mix with remaining ingredients.
- Pour over chicken and onion and cook on high or low until it's done. It took about 5 hours on high for my slow cooker, which I think runs hot.
- Note: The original recipe calls for lemon juice and zest and you could totally cut down on the butter. Next time I make this I will probably use a 1/4 cup of butter and then add some chicken stock.

The long slow cooking really infuses the flavor of orange into the chicken in this dish. I used a slurry of flour and water to thicken the liquid and served it with rice as you suggested. I added some rice vinegar to brighten the flavor of the sauce after cooking. Any acidic liquid - even orange or lemon might have worked too. DH added a little soy sauce. It was very quick and easy.
