orange marmalade

6 eight oz. jars
ingredients
- 6 seville oranges or 6 valencia oranges
- 4 cups water
- 3 lemons, juice of
- 8 cups sugar
directions
- wash, quarter removing seeds, then slice oranges.
- place seeds in cheesecloth bag.
- place oranges, seeds, and water in bowl, cover and let stand 24 hrs.
- place oranges, seeds, water and lemon juice in a non corrosive pan and boil 40-45 minutes or until peel is soft.
- remove seed bag.
- add sugar stirring until disolved and boil gently for 40-50 minutes or until jam starts to jel.
- cool slightly skimming and stirring.
- ladle onto jars and water bath process for ten minutes.

as you can tell from my address i live in a very rural area just outside the park. i head for town once every 4-10 weeks for shopping. i am semi-retired and my children are out on their own. needless to say meals per se are hit or miss, but that's ok. when i do cook it is a feast. on a daily basis it's what ever i feel like making.
my passions are birds, wildflowers and the animals that inhabit my area. deer, coyotes, bear, fox and great horned owls to name a few. and i pan for gold in my creek.
when i have a month or so i like to sail the islands, sounds, bays and harbors around vancouver, washington.
of course i did my bit in my younger years with the business dinners, carnival cake decorating, and everyday meals, but the high light of my year now is the annual family get together over labor day weekend. family and friends come for the food and the fun for a week. had as many as 40+ people at one time. and i fortunatly have the pleasure of doing all the food. i make lists months in advance, and it's always a stunning affair. tents, sleeping bags and people everywhere.
so i am always looking for delicous, simple recipes that feed lots of people ha-ha.
