- 1 cup crunchy peanut butter
- 1⁄2 cup rolled oats
- 1⁄4 cup whole wheat flour
- 1⁄2 tablespoon molasses
- 2 tablespoons sweetened flaked coconut
- 1 cup sweetened flaked coconut (for coating)
- 2 tablespoons extra virgin coconut oil
- 2 tablespoons honey
- 1 tablespoon unsweetened cocoa
- 1 tablespoon sugar (I substitute Xylitol)
directions
- Combine everything except the extra cup of shredded coconut in a medium bowl. I like to use a knife instead of a spoon to combine.
- Using fingers, roll into 1-2" balls and roll/press to coat in the coconut. Place in small muffin papers and refrigerate for at least an hour to firm up.
