  • Combine everything except the extra cup of shredded coconut in a medium bowl. I like to use a knife instead of a spoon to combine.
  • Using fingers, roll into 1-2" balls and roll/press to coat in the coconut. Place in small muffin papers and refrigerate for at least an hour to firm up.
